Simplicity is Key!

 

Nothing beats the delightful flavor of fresh tomatoes, and while canned can work in a pinch, the effort you put into this dish truly pays off. You'll whip up the sauce while the pasta cooks, so no long waits here!

Angel Tomato Pasta

Serves 4

Prep Time: 15 minutes

Cooking Time: 30 minutes

 
 

Ingredients

1 kilo tomatoes

1 package angel hair pasta

1 tablespoon olive oil (or as needed)

4 cloves crushed garlic

1 tablespoon tomato paste

Salt and ground black pepper to taste

1 tablespoon chopped fresh basil

¼ cup grated Parmesan cheese

Method

  1. Place tomatoes in a large pot, cover with cold water, and bring to a boil. Pour off the water, cover with cold water again, and peel the skins. Chop into small pieces.

  2. In another pot, bring lightly salted water to a boil and cook the angel hair pasta for 4-5 minutes until tender yet firm.

  3. Meanwhile, heat olive oil in a large skillet and sauté garlic until opaque (avoid browning). Stir in tomato paste, then add tomatoes, salt, and pepper. Reduce heat and simmer until pasta is ready, adding basil at the end.

  4. Drain the pasta (no rinsing!) and toss with a little olive oil before mixing it into the sauce. Keep warm on low heat for about 10 minutes before serving. Garnish generously with fresh Parmesan cheese.

Tom’s Tip:

Get creative! Try sautéing fresh mushrooms with the garlic or adding zucchini along with the tomatoes for a twist. Enjoy!
