
Spicy Seafood Pasta

Spicy, Summery, Squid & Prawn Pasta

Ingredients
- ½ cup olive oil
- 2-3 garlic cloves, finely sliced
- 1 tsp fennel seeds, toasted and crushed
- ½ cup white wine
- ½ cup fish stock
- 200g cherry tomatoes
- 400g spaghetti
- 200g squid
- 200g prawns, shelled and cleaned
- 2 tbsp butter
- ½ cup parsley, roughly chopped
- Fresh chilies – adjust to your taste
- Salt
- Pepper
- Lemon wedges for serving
Method
- Heat 1-2 tablespoons of olive oil in a heavy-based fry pan on medium heat. Add garlic and cook until fragrant, being careful not to brown. Add fennel seeds, wine, stock and tomatoes. Simmer for 5 minutes or until tomatoes begin to collapse. Remove from heat.
- Cook pasta to packet instructions in a pot of heavily salted water. Drain and add to sauce along with the butter. Toss to combine.
- In a separate pan, heat remaining oil on high heat. Once the pan is hot, add seafood and cook for 3-5 minutes or until just golden. Season with salt and pepper to taste.
- Add squid and prawns to the pasta pan and toss. Stir in fresh chilies to suit your taste.
- Season and serve with lots of fresh parsley and lemon wedges.
